A traditional and tasty shortbread recipe from a member of the Abbey St Bathans SWI has been crowned the best in Scotland in Aldi’s first National SWI Shortbread Competition.
The supermarket challenged SWI groups across the country to come up with the best shortbread recipe they could think of for a chance to see their product appear in store.
The winning recipe was created by Heather Lithgow, (80), from Cockburnspath, whose traditional shortbread recipe beat over 130 entries. Aldi picked the winner from five finalists at the SWI Handcrafts and Housewives Conference in Perth.
As the overall winner, Heather was awarded £250 in Aldi vouchers and the chance to see her shortbread turned into a Specialbuy product, stocked across the supermarket’s 67 Scottish stores for Hogmanay.
The winning recipe will also be featured in Aldi’s online Taste Kitchen.

“There are so many good bakers in the SWI, I never expected to win and I am looking forward to seeing how my recipe turns out when it’s produced for sale by Aldi.”
