The couple moved to Berwickshire from Whitley Bay six years ago and now call Cockburnspath home.
They were tempted a few miles down the road after hearing the pub on Bridge Street was up for sale and familiar with its fine reputation, they expressed a firm interest.
And now after opening the doors to customers for the first time five weeks ago, Paul and Beverley are catching their breath after a busy Easter period.
“We’ve had years of experience in the hospitality industry, most recently working for a season at Pease Bay, so we thought taking over here would be a good step for us,” Beverley commented.
“We’ve worked in plenty of bars but we see having the restaurant here as well as a big bonus as Paul’s a chef.
“We’ve been very, very busy over the last couple of weeks. We were originally intending to work from top to bottom to get make a few changes: lay new carpets, do some painting etc but as soon as locals so we were in they were asking us to open up. We’d be a fool to miss out on the summer trade.”
With chef Paul at the helm, the Carrs have introduced a new menu packed full of local produce.
“People expect certain dishes on a bar menu like pies, fish and chips etc so we’ve got them on but we’ve also got our Sunday roasts and our specials board where we can be a bit fancy and try a few different things.
“Our sizzling pork has gone down really well as people can hear it coming past them and see the smoke. And it gives off an amazing smell!”
“It’s really important to us to use local produce as people round here are really keen to support local businesses and the quality of the food is fantastic.”
Beverley said the custom her and Paul have attracted so far since re-opening has been a good mix of locals and tourists, adding that she was keen for the bar side of the business to blossom just as the restaurant has.
“The restaurant trade has been manic and although the bar gets its fair share of regulars on a night time it’d be good to see a few more faces in.
“We’ve got some themed nights planned for the winter; we want to try and co-ordinate what we plan with what’s on at the Hall next door- we’ve already had Rocky Horror and Grease nights.
“We’ll do Christmas party nights as well but before then we’re really hoping for some good weather in the summer so we can make good use of the beer garden at the back.
“It gets the sun pretty much all day so it would be great to get a big hog roast and have some barbecues.”
One major change Paul and Beverley have made to The New Inn since taking over is immediately noticeable b ut its on the exterior rather than interior.
“We really wanted to get some new signs done and we’re really pleased with how they look.
“We knew before we took over that The New Inn had a terrific reputation, particularly for food so we want to keep that up.
“Loads of people mentioned to us that it had closed and was up for sale and the way things have gone so far I’m really glad we took it on.
“We want it to be a place for all ages; we’ve got a new kids menu and a pensioners special we do Monday-Friday where you can get fish & chips, tea, bread and butter for £5.90- and all our chips and hand cut, no oven chips here!”
