PAN FRIED SEA BASS WITH A CHERRY TOMATO AND SMOKED SALMON SAUCE 

(Serves two)

Ready to serve in under five minutes

INGREDIENTS

2 sea bass

100g smoked salmon trimmings

3 tbs creme fraiche

10 cherry tomatoes cut in halves

1tbs flat leaf parsley, chopped

Olive oil

METHOD

Gently sauté the cherry tomatoes until soft in a frying pan;

Add the creme fraiche and cook for a further 30 seconds;

Add the smoked salmon and cook for half a minute. Remove from the heat and stir in the parsley;

Meanwhile, heat two teaspoons of olive oil in a frying pan;

Fry the sea bass skin side down for two minutes, then turn over and fry for a further one minute.

Serve with the sauce
