Farne Salmon’s factory in Duns has undergone a £1.2 million upgrade as the company joins forces with Tesco on a new range of fish meals.

The ‘Fish in a Flash’ packs offer fillets of high quality fish, sourced from Scotland, Norway and as far afield as Turkey, accompanied by complementary sauces designed to cut the time of preparing dinner.

The new venture has been a collaboration between Tesco, Farne Salmon and various other partners.

The new range includes sea bass in a spice crust with a coconut and lemon grass sauce, cod with a pea and mint sauce, smoked haddock with a spinach and mornay sauce, salmon in watercress and creme fraiche, and more.

Simon Rose, business sector manager, Food Solutions from Macphie of Glenbervie Ltd, who helped to develop the sauces to accompany the ‘Fish in a Flash’ products commented: “We were delighted to support both Farne Salmon and Tesco with this exciting new range of products.”

The state of the art facility is equipped with the latest technology, including laser guided cutting machines to ensure the fillets of fish remain the right size.

Roy Smith, the industrial engineer who oversaw the construction of the new processing facility, says that it is vital to retain human agency over the product.

“The idea is that the whole process is able to run smooth and clean, 24 hours a day, to let us expand our targets,” he said.

“This facility can produce 37 packs a minute, vacuum packed and ready to be in stores the next day.

“But there’s someone watching over it at every stage. We thought it was important to upskill the workforce, so that everybody on the site can work on these machines.”

And each new product is produced according to strict guidelines - each ‘Fish in a Flash’ pack is rigorously tested on its aroma, flavour, texture, size of fillet (within millimetres), the provenance of its fish and its packaging details.
